***below is what i found on the internet that looked like the fried paneer we ate. it was breaded, and in the middle was a whole inch at least size of cheese that is slightly more dense than mozzerella cheese and holds together firmly when breaded and fried. it's rich and tasty. the paneer cheese has more protein than most cheeses and a very light taste. there were also some herbs baked inside with the cheese and 2 sauces they provided for dipping - one sweet like duck sauce tasting and one green herbs like a cilantro or pesto / chimmichurri or other light green herb sauce. it's fried food done right! this appetizer was ordered at the takeout indian place i go to - Ricky came by my work around lunchtime and i showed him the "famous spot" where i always get takeout for him when i bring home Indian!  he ordered the equivalent of 3 of the below and i had half of one.

snack of Brussel sprouts and chili 250

light  dinner cooked jelled cranberries (ty donkey!) and whipped cream 200 and more cranberries with greek yogurt / almond butter on bottom 250. total very filling and sweet 450

gummies 100, CHOCOLATE 50

i posted a photo of what it looks like, maybe i can find another photo of when you break it in half, but picture it as a big white cheese under the coating, and when it's broken in half, the cheese stays firm and you can cut in right in half :)

wrap with chicken sausage 300...cooked cranberries and lots of the liquid ;) 80

I cooked made some things today - broiled a brand of already cooked sausage, made bok choy but it came out tooo bitter so I rinced it and sweatened it a bit, and made cooked cranberries but slightly differently using donkeys ideas mixed with my own. I used a cup of no sugar sweetener and water and also a small amount of gelatin - we'll see how it sets in the fridge

What a wonderful morning - your weekend is off to a great start!

Do you have Monday (Chanukah) and or Tuesday (Christmas Eve) off? I have to work both of those days, but I'm thinking they may be quiet days at the office because of those holidays. Can you let me know? It would help me set my expectations for my own workplace, LOL...

Of course I have the Wednesday for Christmas off....

Chanukah is not a major holiday so no I do t have it off and since Christmas is a Wednesday, they didn’t give us the Tuesday off but it will be a shorter day to go home early :) the week will def be a quiet one I am sure :) but like you, since Christmas is midweek and not close to the weekend, I’ll be working also on the other days. Same with New Years - I’m just off in New Year’s Day.

Nope, I don’t go to the gym anymore - my parents also have some equipment so whether I am home or with my parents, I am able to do my exercises which is just wonderful and so convenient !!!!! It’s worked out really well!

Thank you for your input on the holidays. Our schedules sound the same. I will get to leave earlier on Christmas Eve than I will on New Year's Eve. Some law offices will get Christmas Eve off, so I would imagine that a lot of people may take Monday off as a vacation day. At least that's what I'm hoping.

dinner: holiday party for company...dinner......dessert = coffee only!!!!!! ...few fried calamari 150, fried eggplant and piece of meat 150, wine 100, salad 100, pork 300, fish 100, coffee 50...1000?

2250, very good!

i take the bag of them and put it in a large, microwave safe bowl. i watch it while i stick it all in the microwave, for around 1min-2min, i only add stevia...and i cook them till they pop. i mix them after a minute in microwave, and add them back in there for around 1-2 minutes more, watching it so it doesn't explode and i keep it with a paper towel over them while they cook in there. total cooking time is 2-3 minutes tops. i add stevia at the end to taste...quite a bit since the cranberries aren't sweet. and then i mix it into things - like yogurt, oatmeal, or as a topping like with brownies, etc.

other things can be added in, like raisins or orange / lemon zest. but i love it just as it is, with stevia.

I make my cranberries on the stovetop. Bring 1 cup of water and 1 cup of sugar substitute to a low boil, add bag of cranberries, stir continuously until the water starts to boil again, then turn down heat to low for 10 minutes, continuing to stir frequently. Remove from heat and chill. Here in Illinois, I usually put the pan outside to cool down. Then refrigerate. The longer the water & berries simmer (say you go over 10 minutes), the more concentrated the juicy liquid becomes.

Good idea thank you for sharing ....this makes a larger serving than mine with the extra water and it makes them more saucy. I’ll have to give this one a try.

snack: tbd...i keep forgetting to pack fruit - half pear 50, chocolate 50

evening: chinese soup with tofu 300, chips 250, orange 100. 650, chocolate 50

yes, it was a greek yogurt that was blended with fruit mixed in, then i added around a cup of sweetened with stevia pumpkin from a can.

so it's really like a 2 cup serving of food when eating the 1 cup almost of yogurt with 1 cup of sweetened pumpkin.

i'm staying with them on and off....i have a lot more appointments lately with dr / therapist, and those appointments are by my parents so i'm staying with them more frequently right now.

today i have my psych dr appt at 7:45pm. yes, this office has great hours. I will take the train home (a different one) directly to my parent's town and my mom is picking me up. then, i'll have dinner with her and go to my appt. THEN, i'm sleeping over my parents' house and my dad is driving me to the subway tomorrow to go to work. I brought only a change of top (shirt) as i have everything else at their house and i plan to make it easy - wear the same pants tomorrow, etc..lol

I got lucky and didn't plan for this dr, but it worked out well. I think a lot of therapy places in my area are starting to switch to being open more conveniently for people who work :)

Tonight i have to be home, as usual, but to give someone 2 tray tables i'm selling on Facebook local. I sold the two that are in good condition for a total of $10 combined just to get someone to want them and take them out of my closet so my apt is less cluttered :) He will come by i think around 7pm to pick them up and i'll bring them downstairs :)

Ricky slept over Sunday night into this morning and that has helped me sleep so much. Usually it's the opposite with me, but, lately i feel much better around someone who cares about me.

When my husband worked nights or was out of town for work, I never slept quite as well as when he was home. It's comforting.

lunch: salad with some dressing and chick peas and croutons 250, challah bread 200, tuna salad 150. 600

3pm snack large apple 100

4:30pm  try the pumpkin chocolate chip muffins i made for work with almond milk. 200 total.

dinner: leftovers, maybe more tuna salad since i have a large amount from diner last night and don't want to waste it. dinner around 550  it was tuna on rice cakes, salad with dressing. very filling.
