Yesterday was a good day and so far so good today, as well.

B:  Iced Vanilla Coffee  1/2 banana

L:  Cottage cheese and tomato and pretzel dessert!  (I brought the dessert to work so it would get eaten up - so no more of that stuff - but I have brought a giant zucchini home to make zuchini bread and muffins with!!)  I will make them, but go low on sugar)

D:  Chicken Salad on King Bread

Going to check on the wild blackberries degree of ripeness this weekend and if ripe will pick some - YUM

No word on the next step from the intereview yet.  They had asked for references and contact info for those and I supplied them yesterday by email.  I hope they make an offer and it's a "good" offer and I can make the change and LIKE it.  Ha!  I don't ask for much, do I?

Fell asleep and didn't eat anything else last night.

B:  Boiled Egg and a few bites of cottage Cheese, Iced Vanilla Coffee

L:  1 1/2 peaches, 1/2 C cottage cheese, 1/2 can Amy's tomato soup, a few (5) purple cherry tomatos!!

S:  honey nut corn chex cereal with a dash of milk

D:  small piece of baked seasoned cod, 1/4 C mashed potatos, pretzel strawberry dessert make with SF and LF ingredients and 1/3 the sugar called for.....good.

Well, I can tell I was craving something crunchy......and sweet but didn't do badly.  This was Day 4.

yes, I make my own iced coffee. On pot of good strong coffee, truvia and some vanilla Natural Bliss creamer. I did not sleep that well, actually despite falling asleep at 11:00.

Did well yesterday - that's 2 days in a row - I'm going to make it 3! 

I didn't do much exercise yesterday - just a short walk and abs.  We went to outdoor concert with picnic dinner.  See details on yesterdays post. 

At 3:30 today I have an interview for the job I told you all about a couple of weeks ago.  We'll see how that goes.

B:  Oatmeal with br sugar splenda, pecans and iced vanilla coffee

L:  1/2 can Amy's tomato bisque soup, cantelope and cottage cheese

D: Chicken Salad on King's bun, several bites of cottage cheese

UPDATE:   Interview went very well.  I will be surprised if they do not offer me the position.  Now, what the offer will be, don't know yet, but we'll see.  I have peace about it either way.....at least right now!!

Will probably eat a little more later tonight. Raining AGAIN so no walk, but I will do some weights for upper body before I go to bed.

Yes, exactly. It was enjoyable. It's kind of an old fashioned feel to it. I used to do special foods, but anymore we just toss some stuff in a cooler and go.

I had a really good day with exercise and food yesterday.  Going to make it 2 in a row!!!!

Have to call the plumber back today - the leak we thought was fixed is back.  The plumber said they may have to cut into the drywall to fix the issue.  I sure hope not!!!  It seems to be only when we fill the bathtub up past the jets.  If we fill it only a little it there is no leak, 

B:  Oatmeal with almonds and cinnamon, iced vanilla coffee

L:  Small serving of roast beef and green beans, tomato with cottage cheese, peach

D:  Small BBQ sandwich, 3 crackers with chicken salad, peach,

Husband cut out recipes and asked me to make a couple of things......one is a pasta salad - which I do NOT eat at all.......the other is hamburger with McCormick hamburger seasoning and worchestershire sauce and onions.  I old him to choose his ingredients for the pasta salad and I'd make it for HIM.  I will make the burger for both of us soon, though!!  I think I can make it work with my menu plans.....

 I was reminded of a recipe I made that I wanted to share - Baked Zucchini Coins -

Barely spray a cookie sheet with pam.   Preheat oven to 350  Mix equal amounts of panko bread crumbs and grated parmesan cheese with salt pepper and a little dash of ground red pepper.  Place 1 teaspoon of mix on the cookie sheet and place a zucchini slice on top and put another teaspoon of mix on top of the slice.  Fill up cookie sheet like that and bake until golden brown.  Cool slightly and eat while good and warm.  Not sure of the cooking time - but it doesn't take long...pretty darn good and no fryng!

Update - husband and I took the dogs and picnic dinner to a local neighborhood part for a ragtime jazz concert.  The Dept of Parks and Recreation will sponsor one in this park evry Tuesday in July & Aug and we will probably go to most of them.  We do this most years and it's relaxing.  Tonight was the Walnut Street Ragtime Ramblers.....they will have cool jazz big band and an eclectic band or two.  Mostly NOT my kind of music, but the fact that it is outdoors and a place to people watch is fun!

Yes, it's easy to make. I put 4 T of regular (not quick cook) oats in a soup mug with about 1/4 C skim milk and microwave for 1 min. Time varies. The top with sliced almonds and 2 teaspoons of br sugar splenda - it's very sweet- and a little cinnamon. The iced coffee is just coffee made really strong and cooled off plus Bliss Vanilla creamer.

Oh, I put zucchini in Everything in the summer when people give it away. It's great to put in most anything when it grated up. I put in cakes, cookies (of course I am not eating too many of those these days), but grate it and put it with other vegetables. It's almost a game to see how you can sneak some in!!

Yeah o, I really am enjoying the cottage cheese. Like I said, just a couple random spoonfuls when I am feeling kind of "ify" on what to eat for a snack or like I am going to break over and eat something I do NOT need. I need more protein.

Well, duh, I forgot to comment about R. She is doing really well. 22-23 weeks now and she told me last week she's gained 8 lbs, but 9 inches in her waist. She seems to be "OK" with it. She is being reasonable about the fact that she is not in control of her body as much as she used to be, but seems to be ok in her thinking. She is only doing personal training and some odd classes here and there. She may start babysitting for a little 9 month old girl on a regular basis. I know she and Will want her to only work part time after she has Rosalie. I can't believe everything has happened so fast in the last 3 months! Whew! Never a dull moment with R! I'll tell her you'd like to talk. I'll inbox you her phone # in case you want to talk to her. It hasn't changed and I'm sure she'd like to hear your voice!

Couldn't post for a few days.  It was a compatability issue. So,

B:  iced vanilla coffee, boiled egg

L:  cottage cheese and tomato, peach

D:  small portion of beef roast, mashed potatos, one corn on the cob and a big slice of corn bread with maple syrup. 

S:  Banana

Stuffed now - going to exercise. 

Walked in the humidity - miserable - one hour +.......foot hurts.  Did ab exercises and very light weights.

Farmer's Market this morning early.  Lots of goodies - green beans, new potatos, zuchinni, cucumbers, tomatos, cantelope, beets! 

Had breakfast there - homemade sourdough bread with fried green tomato, bacon and aioli pesto.  Wow!

L:  cantelope, beets,

S:  Small soft serve

D:  Grilled chicken, beets, green beans, potatos and cucumber, onion and tomato salad

I wish our farmers market had as much. It was kinda limited when we went last Saterday. We spent 20$ on beans-Kale-garlic snips and the rest we had to get from RedBarn which is still mostly local farms so that was good- it is an hour commute to get to it though... ha ha but so was supperstore so we brake even I guess. Anywho-- kick some butt!

That's odd that you can't post--one thing you might try if you're using a computer with Explorer as your browser would be to click the compatibility view icon in the address window (it looks like torn paper). Hope you get it solved!

Updated yesterday's post.  It was a pretty good day.  Didn't feel that well because of some intestinal issues, so only took a short 20 minute walk with the dog sitting dogs - they are so cute.  But better than nothing.  I am SO looking forward to the weekend after today.  Farmer's Market early tomorrow.  Maybe a bike ride (I know I sound like a broken record) and some yard work.

B:  Salt risin toast, tea

I have not had coffee all week and it's probably a good thing - since I have not hardly slept at all due to the prednisone I am taking for poison ivy.  That is also the likely culprit on the intestinal issues.  But I step down the doseage with only 3, 2 1 the next three days so I expect it to get better.  It's really the only thing I can take for the poison ivy and it usually doesn't bother me very much (which is why I take it and not the other drugs that could be prescribed)!

I'm sure you will be back on track once you finish the prednisone. I've had horrible bouts of poison ivy and oak so I can sympathize. I *think* I've killed all of it on the fringes of our yard/woods where I dump compost and cuttings. Have a good one!

Severe Thunderstorms last night.  Didn't get to walk dogs or ride bike.

B:  Pancakes and bacon, coffee

L:  1/2 Turkey and ham sandwich, Tea

D:  Grilled Salmon, green beans, carrots

S:  Sm Soft Serve cone 130 calories

Short walk with dogs.  20 minutes

Had to take husband to pick up his repaired car this morning - early so treated myself to a big breakfast.  Not really hungry at lunch, but won't have an opportunity to eat anything mid afternoon - so just had 1/2 sandwich.  His car seems fine - he had accident a month ago - $10,000 damage to the vehicle.  Very lucky.  Was hit by a 21 year old lady driving a UHaul box van with her car on a trailer behind it.  She was moving from WI to NC with her two year old in the Truck, too.  She side swiped him as she merged from an exit onto the road he was traveling on.  This was her SECOND accident, we found out from UHaul, on her trip!   Bless her heart - glad no one was hurt. 

Going to walk or ride tonight.  Probably walk so I can take the two dogs I'm sitting with along...weather looks pretty good.

WOW on that accident, I'm glad no one was hurt. Hubby drove one of those UHauls with his car behind it when we moved from OR back to CT. I was following in my little sedan and I'm so glad I didn't have to drive that thing. Only mess up we had was in nowhere Nebraska when we stopped to eat and I got back on the highway heading west instead of east. And of course the exits are like 100 miles apart out there, so it was a time consuming mistake ;) Have a good one!

I think this women should stick to smaller vehicle LOL. There are a lot of blind spots with these trucks but your husband was lucky it was not anymore serious and that he is ok. Have a great evening.

D:  So far two pieces of Salt Risin Bread Toast with Jam

S:  Pimento cheese sandwich/1/2 peach

Took the leftover green beans and new potatos to my mother - she loves them.  I will make more.....

Going to have severe thundertorms all night - neighbor kids setting off firecrackers and it's all driving my poor female dog nuts!

Didn't sleep last night because of the prednisone but also not tired today.  Maybe it will help me burn some extra calories.  I don't have much appetite. 

I haven't heard back from the possible job.  I sent my resume, as you all know under dubious circumstances and she said she received and passed on to boss.  They were working on a job decription and it's not posted on the Employer's website yet.  I am so perfect for this job - I wonder if she called any/many more people???  There are some younger ones than me and I am concerned about that.  Oh, well, it's out of my hands.

Yep, the tzatziki is Greek and is used on gyros and also as a salad dressing. Our neighbors set off fireworks last night right at the boys' bedtime - I guess it's the season! I hope you won't worry about the job, I'm sure they have to interview X number of people to meet mandatory requirements even if they've decided on you. I hope you hear something soon!

I love greek food, but have never made anything greek and didn't know what the sauce was called - I am greek food ignorant-LOL. We have a great greek food catering service in town, mostly do festivals and special dinners open to public at the Greek Orthodox church. they have a bake sale several times a year, but I can never make it in time. Just as well because I'd eat a bunch of baklava and almond cookies! About the job situation. I just keep thinking if I hadn't gotten that phone call I would just be resting in the knowledge that I'll eventually get another job if/when this one goes south and that I am where I am supposed to be for now....but since I got that call it's stirred me up. But it will be resolved. Thanks for the comments!!!

Updated yesterday's food for a change.  Did ok. Also walked an hour with the dogs and husband.

B:  two pieces of Aunt Millies multigrain 35 cal bread and jam, tea  was gonna eat an egg, but forgot! 

L:  Chicken Chalupa - plain

D:   fresh green beans cooked healthy but delicious!  3 tiny new potatoes with a little butter, Tea

S:  2 T Nutella and 6 ritz crackers.  Nutella almost gone - thank Goodness!

No exercise tonight - had THREE teeth worked on by dentist - two very large old amalgam fillings replaced and one small new cavity filled.  2 hours in the chair.  Mouth hurts.  But glad to have all this work caught up and done.  Said teeth are in good shape now all the way around.  Yay!

I am dog sitting for 2 aussie poos Lola and Charlie.  They are so sweet and owners are going to be gone for a week.  I like the extra $$ and it's fun.  They live about 3 streets over.   I can only sit for pets in our neighborhood.  Since my office is in the neighborhood, too, I can go at lunch and take care of them.. If I have to travel Daughter can cover for me from her house just a few miles away. 

Oh - healthy (except for sodium load) fresh green bean recipe - I cooked 2 lbs of JADE variety green beans in low sodium chicken broth with a heaping T of Ham seasoning and a slightly liberal shake of Sylvia''s Greens Seasoning and a couple short dashes of red pepper with white and red new potatos on top.  Delicious.  May sound weird, but I like southern style green beans but not all the fat that comes from cooking them with ham hocks or country ham, etc.  These were acceptable.  I am picky about my green beans, too!

RYC, the tzatziki is yogurt based, so I'm not sure how it would hold up on the grill. I use it as a dressing, or to put on top of burgers, chicken, etc. It's super easy - I use nonfat Greek yogurt and mix with chopped cucumber, fresh dill, a splash of olive oil, some lemon juice and seasonings - garlic, salt and black pepper. Wonderful on hot days! Your foods look great and those beans sound awesome.

Thanks for the info on the sauce. It sounds greek. Is that the same stuff you get on Gyros? I love that stuff.
