DH got home and found the soy sauce for me. I didn't know I would have to climb half-way deep into the food cabinet to find it. I got the tofu bacon recipe from a meatless friend. He said it was very good for making meatless BLTs. Here is the recipe should you be so brave.

Firm tofu sliced

1 tsp onion powder

1 Tbsp nutrian yeast (optional)

2 Tbsps soy sauce

1 1/2 Tbsps maple syrup

1 Tbsp oil

1 1/2 tsp liquid smoke

Dip tofu in marinade and then bake for 15 minutes on 375F. He said it should be crispy, depending on your slices. He had about 16 pieces slided from his firm tofu.

I was wide awake at 4:30. I got up and went downstairs; did some zumba drank a cup of green tea and relazed for about 20 minutes before taking a shower. Feeling pretty good in the early afternoon...I hope I don't fade away as the day passes. - And then my stupid fitbit was out of life. I usually get an email and/or text letting me know the battery is low, but I didn't get that text or email - so missed some steps - bummed!

It has been raining all day - the sun is out right this minute but more rain coming. I would prefer it be cold and snowy now instead of in March and April...oh weather!

B: yogurt, iced vanilla latte

S: banana

L: left over avocado and walnut pesto penne with chicken, apple, carrots and cherry tomatos

S: balanced breaks

D: TBD - chicken is thawed but I wanted to keep that for chicken chili

excellent eating...how did your tofu turn out? i am a horrible chef so i don't see myself trying that recipe any time soon lol...but it looks tasty!

...I wish I could wake wide awake at 4:30am... Isn't it incredible how much you can get done when you wake up early? I get up around 5am every day, but don't mentally "wake up" until about 6:30a, so I pretty much waste 1.5 hours each morning just trying to convince myself to get started. Yep.

Sounds good! I eat tofu about 3 or 4 times a week, but never had it as bacon.

I thought I had all the ingredients for dinner but shopping for four hours yesterday was just not enough. Stores do not have zucchini. I went to Walmart and picked up some tofu for an experiment.

Then came home and watched the Librarians marathon because that's why I do!

B: cheesecake m&ms

L: bread and rotisserie chicken piece

D: pesto with avocado and walnuts with penne and rotisserie chicken. Cucumbers and tomato salad with mozzarella and Italian dressing.

S: yogurt

Was trying to make tofu bacon but couldn't find the soy sauce and we had no oil so I will try this again another day.

Walked the dog, did laundry and some Zumba. I could get usd to three day weekends! Ended the day with 1107 very happy with this!

I'll post the tofu bacon on my entry. The Librarian's is a series on TNT. Noah Wylie from ER and Falling Skies is a librarian with three trainees and they save the world from historical relics and artifacts either recovering them or keeping them safe from thieves. It is humorous most times.

Emotional night. DH's son was texting him and apparently was thrown out of his mother's and step dad's house. He was at the grandmothers. DH picked him up and brought him over; he was upset his GF broke up with holiness and was asking DH to help him get a job. DH was suggesting he finish school. All the kid wanted was a way to get money and wasn't interested in school. Poor thing is so angry and confused and knows EVERYTHING! Finally he tells DH he doesn't feel comfortable here so DH takes him back to his grandmas.

Today I gave DH a few options to talk to his son about the local community-tech or even Job Corp but again this almost 19 Year old knows it all. I wish I was so smart at that age /sarcasm/.

I was up at 8:00 and took a shower. Went shopping with DH left at 10:00 and was back about 2:00. I hate shopping! And I need to go pick up two things we forgot even with a list!

Thinking about getting my hair colored on my day off if I get the laundry finished.

B: toast iced tea

L: cheeese pizza slice

D: hamburger string cheese salad

S: yogurt , tried a handful of cheesecake m&ms (they are ok- won't even a problem)

Ended with 1263 calories

GREAT calories - you have gotten the hack of this! I'm really proud of you!!!

Sorry about the boy he sounds pretty troubled. maybe DH can try one more time - explaining that if he doesn't have any training, he'll always be making the lowest about compared to everybody else and not have any extra money other than pay bills...and not be able to enjoy life at all...he won't be able to get a place of his own...etc...i don't know. sorry....but...stay positive InnerP, I see you are doing REALLY WELL in this New Year!!!

Super lazy day. I did not get out of bed until 9:45. And then I just sat around not doing a lot. Finally about 11:30 I washed dishes and put a pork roast in the crockpot.

B: balanced breaks

L: toast, peanut butter

S: yogurt

D: pork roast with potatoes and carrots

S: pieces of monkey bread

Ended the day with 1477 calories and an earache.

Hope it doesn't escalate into sickness.

So got the girl and I swear sometimes she gets on my very last nerve. DH had to leave to go his doctor's appointment. So the girl takes a shower and comes down with a big huge bow in her hair. She has said several times, she doesn't like this bow and it's killing me to ask why she has it on, but I mind my own business. Why we are eating she tells me her step-sister called and told her that her mother wanted her to bring the bow home. So the little girl tells me she is wearing the bow so she won't forget it! I just roll my eyes and say whatever!

I don't care about the bow and if the bow was digging into my head and was uncomfortable, there would be no way in hell I would wear the bow...anyway. Then she says, my mom wants me to bring the bow home. Again, I don't care! I say, well take it home then. I hate that bow!

I didn't feel like eating the pork so we had the quinoa vegetable patties - or I did, the girl had chicken nuggets because she didn't like the quinoa patties. I also had 1/2 avocado and some rice. I also had a yogurt for dessert. I ended the night with 1492 calories.

I guess I had a good sleep, but it seemed as soon as I laid down the alarm clock was going off. It took everything I had to get into the shower, I'm so glad I don't have to work on Monday. It will be a nice break, for some reason this was an extra long week.

S: apple

L: 1/2 peanut butter sandwich, humus, carrots & cheese crackers

S: balanced breaks

D: I guess I will break down and cook the pork - air fryer sounds like a great possibility.

Feeling extremely tired and wonder how I am going to make it 3 more hours AND work is slow, so not fun!

A few plans for the weekend, some depend on weather, and I seriously need to find some sleep.

Excellent eating and calorie counting. Healthy eats as well...it's important to make good choices or you'll wind up with facial skin that's on it's deathbed like mine! LOL...

also, my work is just like yours - so thankful for Monday off!

My work is slow, but i'm more thankful this way than when it's too busy and i'm stressed...

for me, the slow work is Perfect for these months working on my fitness and getting into NYPD...this can be a GREAT thing :)

Got home and took my dog for a walk. A neighbor's dog attaked him on the sidewalk. It scared me and I yanked my dog up with the leash. He was skittish the rest of the way home. When I tried to pick him up later he yelped like I was hurting him. I don't know if it's from the other dog trampling him or from me yanking him up with his leash, either way I felt so bad for my little guy. Tonight, I will stay on our side of the street.

Another score with the air fryer. After cutting the chicken up in pieces I put them in the air fryer and it cooked them right up all crispy and tender. After I tossed them in the Korean BBQ sauce which turned out spicier than I thought. Had a little zing! Finished the day with 1582 calories

Slept ok with the rain going on, but was unable to roll out of bed, so I reset the alarm and then overslept, not by much but I hate being rushed. Needed gas again this am, so again splurged with the cappaccino, a smaller size this time. `

B: crumpetts with peanut butter, iced vanilla latte

S: English toffee cappaccino

L: 1/2 peanut butter, apple, balanced breaks

S: hummus, carrots, some crackers

D: something with pork. DH took pork out and since we aren't eating out, we need to find something to do with this pork.



On another note I will be attending my BFF's binding ceremony and she said I would have to give a toast, so I put this together and wanted to see what any comments or suggestions would be. Is it too long? too corny?

I am so excited to be here. I have the privilege of saying...I take responsibility for this union. Times - I have known Dianne since our freshman year of highschool. I can tell you things and you would have to believe me because I doubt she would remember anything. Her short term/long term memories are total whack! Don't get me wrong she remembers the cool stuff, like vacations, trips, standing in line for concert tickets, meeting Dolly Parton and troubles with parallel parking, but ordinary day to day stuff just disappears from her mind. Good times...the only stuff that matters times.

Dianne has been there for me through some very tough times, she has traveled to many places to visit and be by my side and for that I could never thank her enough. She was/has been my rock in not so good and bad times. I can say that I have been there for her as well...I was someone to rant and rave to about crappy work times, talk things out and wonder about times. There were times she would talk to me about things I had no clude what she was talking about and would only be there to listen. Chakras, metaphysics and dogs. She'd drop a few names like Carolyn Myss and Wayne Dyer names I didn't know. I would listen but couldn't give any input because...well to be honest she is/was weird...confusing times.

Imagine my surprise when sitting in my office working diligently, when Miss Kelly walks in and starts talking...again with the dogs, metaphysics and self help and I sit and listen again with no input. This entire time I'm thinking...oh wow, I have this friend, who talks to me about the same exact things! I would say, I bet you guys would have some awesome conversation time.

Well the first attempt at getting them to meet, didn't quite work out for reasons...trying times! Crazy times! Timing is everything! A few years later, having the same conversation with two different people, why I literally sit and listen to each of them talk things out for themselves - it would be just plain silly not to try again. I remember inviting Kelly to dinner with Dianne and me and they did talk and they had a great time...and as they say that's all she wrote! It was time, their stars were aligned or each had something the other needed.

Timing! this is your time now and I hope you continue to have those crazy conversation times, listen and talk to one another and be happy times. And Kelly, if Dianne ever gets too mad at you...remember she loves ice cream time. I wish you both joy and happiness, but above all of this, I wish you love. Here's to Dianne and Kelly times! Cheers!

Well...picked up the girl and got home. She didn't have homework so she went upstairs to her room and is still straightening it out from the last reorganization/declutter. I cooked the dinner of spaghetti with meat sauce. The zucchini squash was soft and squishy so that was tossed. I didn't turn on the over for the acorn squash. I may have that tonight. I ended the day with 1599 calories.

The girl entertained herself and was talking to friends on facetime until she left about 8:00. I was home by myself until DH got home about 8:45. He ate, took a shower and passed out by 10:00.

The wind howled most of the night and a few times I was sure our roof would be blown off, but it held on. I was up at 4:50 to do the zumba, but I couldn't get the stupid CD to play. I pressed every button I knew to push. I even changed out a battery, to no avail. I told DH this before he left for work and he was fiddling around with the remote and asked if I changed the batteries. I told him yes. He said there were two batteries, I only saw one - the other was crammed into the bottom of the remote. Anyway, it works now so tomorrow if I'm so inclined to get up...I will be able to do zumba.

B: crumpetts, peanut butter, iced vanilla latte

L: left over spaghetti, apple

S: balanced breaks

D: grilled chicken (i may try this with the air fryer) and rice with some Korean BBQ sauce

S: yogurt

There were donuts and brownies in the breakroom! They are still in the breakroom! YAY ME!

Stressing at work, made some accounting/coding errors I had to report to regional headquarters, but first I had to admit it to my boss! I hate that - being wrong...admitting it!

Again this morning I was awake, I consciously turned over and reset the alarm! I guess my body needs the sleep right now more than it needs to exercise. I will keep trying though.

DH worked late so I was home alone until 8:30. I took the dog for a walk...he wanted to go and he couldn't make it around the block. His feet were wet and cold and he was limping. I had to pick him up and carry him the last four houses. He doesn't want to wear his booties so...

I had the quinoa vegetable crunch patty with avacoda on naan for dinner. I also had some left over spagetti squash with parmesean. It was tasty. I did eat a yogurt right when I got home and then had a small bowl of maple granola while DH was eating dinner. I finished the evening off with 1371 calories. I am happy with this.

The drive in was crazy with snow and freezing rain and to top it off there was only 1/2 heat at the office. I have been sitting at my desk with a space heater on all day. THe repair people just got here after lunch and hopefully this will be fixed.

DH is working late and i will be getting the girl. I had an adult craft planned but cancelled beccause i didn't want her to sit alone while i did the craft. She was out of school today too...weather related!

B: crumpet with peanut butter, iced vanilla latte

L: ham and swiss on naan, apple, yogurt

S: balanced breaks

D: spaghetti noodles with cherry tomatoes and avacado - maybe acorn squash (i will make regular spaghetti for the girl and DH)

Not caring for the freezing rain and cold.

My dog was barking at me this morning about 12:50, so I got up. He was out of water. I felt so bad for him. I usually check this before I go to bed.

I woke up at 4:00 as well, but instead of getting up, I rolled back over and went back to sleep. One of these days, I will get up and do some exercise.

DH has to work late tonight so I will fend for myself for dinner.

Sing...cute but I liked Zootopia better.

Slept longer than wanted to this morning, but it was a good sleep. Woke up at 8:30 and showered. Had a hike scheduled for 1:00 but it was only 8 degrees out. I started out by my face was freezing so I came back home. Brutal bitter cold.

DH and the girl went shopping to pick up a few items, I stayed home and did the laundry...again. I swear you can never get caught up.

B: iced vanilla latte, two biscuits with grape jelly.

L: caesar salad

D: air fried chicken, kale salad and spaghetti squash salad (spinach, tomatoes, onion, garlic and parmesean cheese) very tasty.

S: yogurt

I finished today with 1492 calories - this I like!

I can't believe how fast this weekend flew by. I don't think I am ready to go back to work tomorrow...but I will make the best out of it.

I feel like I commented but forgot to press the comment button to add new comment oops...either way, if you stick to eating like this, you will SURELY lose weight and quite easily.

Be proud of yourself, I'm impressed with your desire to always better yourself in basically every way you can. Good for you. :-D

Your dinner is simply amazing. I'm going to work on getting back to whole foods this winter as well. My diet is awful with so much added sugar and crud...and salt and such.
